The main principles of sommellerie (wine service)

This is an indepth training session that covers standard service techniques of still and sparkling wines, port and dessert wines, presentation of wine lists and offer of assistance with selection, , cleaning of glasswear, familiarity of wine service tools and how to serve wine correctly.

How to enhance customer service

An interactive session that covers the elements that enhance the customers experiencein your outlet ; being prepared for service,  teamwork, talking, listening, questioning, body language.

How to correctly care for and handle wine service equipment

How to use key pieces of equipment that are important for wine service, list and follow the steps in the order of service. Open and serve still and sparkling wines to customers. Use information on wine labels to describe wine styles to customers.

How to serve wine effectively

This is a hands on session on how to select, present,  open a bottle of wine whether still or sparkling and how to pour wine at a customers table with a focus on topping up to encourage more sales. 

How to store wine correctly

We want to help you store your wine safely and securely whilst ensuring quality and value of the wine for the customer. It is important to present and store your bottles of wine correctly and training you staff in this area will ensure your customer gets the wine in in the best possible condition.

Food and wine matching

Our aim is to equip your staff with knowledge of the principles that underlie the expert matching of food and wine. The elegant pairing of food with wines that have the ability to compliment the dishes’ flavours is a valuable skill in professional and social situations, but even real wine conisours struggle with it . This is why our masterclass is taught by our expert who specialise in wine and food matching.Instead of learning, or memorising, which wine goes well with certain types of food, they will gain the confidence to choose a wine for any type of food, or occasion. Taking part in our wine and food matching classwill enable them to select wines based on their ability to compliment your menus .

Justin Martindale

Justin not only has a passion wine but for teaching,  passing on his extensive knowledge to students in an easy understable way . He is the tutor at The Hamilton Wine Academyand if there’s one thing that Justin knows, it’s how to excel in WSET exams! Having passed his level 3 with distinction in 2009, Justin was proud to accept the Calem Port Award, one of the WSET’s coveted scholarships offered to only a handful of the very best students in each year.

In 2013, Justin completed his WSET level 4 diploma qualification and was again delighted to accept another WSET award, this time the prestigious Derouet Jameson Memorial Foundation Master of Wine scholarship. The Master of Wine qualification is considered the very pinnacle of knowledge in the wine trade, of which there are only around 300 in the world, and Justin was accepted on to the course in 2014. You are in safe hands!
